Description

A refreshing summer salad combining sweet watermelon and tangy feta cheese, perfect for warm days.

Ingredients

Scale
  • 4 cups watermelon, cubed and chilled
  • 1 cup feta cheese, crumbled (or goat cheese)
  • ¼ cup fresh mint leaves, torn
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt to taste
  • Optional: chopped cucumber for added crunch

Instructions

  1. Start by preparing your watermelon. Cut it into bite-sized cubes and ensure it’s chilled for maximum freshness.
  2. In a large mixing bowl, combine the cubed watermelon and crumbled feta cheese.
  3. Tear the fresh mint leaves and add them to the bowl. If you’re using cucumber, toss it in at this stage.
  4. Drizzle the olive oil over the mixture and squeeze the lime juice on top.
  5. Gently toss everything together until well combined. Be careful not to crush the watermelon or feta.
  6. Add salt to taste, and serve immediately for the best freshness.

Notes

  • For a sweeter variation, consider adding a drizzle of balsamic reduction.
  • This salad is best served immediately to maintain freshness.
  • Adjust the amount of feta according to your taste preference.
