Ingredients

  • 2 thick slices seedless watermelon
  • 1 8 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup milk chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening
  • Fruit for decorating: kiwi, strawberries, blueberries

Instructions

  1. In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla. Mix until smooth.
  2. Prepare the fruit for decorating the pizza. Make sure fruit is washed, dried, and sliced (if needed).
  3. Pat the watermelon slices with a paper towel to help the cream cheese mixture stick.
  4. Evenly spread cream cheese mixture over the watermelon slices. Decorate as desired with fruit.
  5. Melt milk chocolate chips with coconut oil in the microwave for 30 seconds. Stir well. Drizzle over fruit.
  6. Refrigerate until ready to serve. Best if served immediately.
