Description

A delightful and fluffy White Almond Cake layered with creamy almond buttercream frosting, perfect for any occasion.


Ingredients

  • 2 1/2 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 egg whites
  • 1 tablespoon vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 3 tablespoons heavy cream or milk
  • 1 teaspoon almond extract (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pink food coloring, optional

Instructions

  1. Preheat the oven to 350°F. Grease two 8 inch cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar until pale, creamy, and fluffy.
  4. Add the egg whites one at a time, mixing well after each addition. Stir in the vanilla and almond extract.
  5. Add dry ingredients and milk alternately, mixing gently until combined.
  6. Fold in the sour cream until the batter is smooth, being careful not to overmix.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 28 to 32 minutes, or until a toothpick inserted comes out clean.
  9. Cool the layers in the pans for a few minutes, then remove and cool completely.
  10. For frosting, beat the softened butter until smooth, then gradually add powdered sugar, almond extract, vanilla extract, and heavy cream.
  11. If desired, add pink food coloring to the frosting.
  12. Place one cake layer on a serving plate, frost the top, then add the second layer and frost the top and sides.
  13. Chill slightly before slicing for cleaner layers.
