- 2 1/2 teaspoons baking powder

- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 egg whites

- 1 cup whole milk
- 1/2 cup sour cream
- 1 cup unsalted butter, softened (for frosting)

- 1 teaspoon vanilla extract (for frosting)
- Pink food coloring, optional
Instructions
- Preheat the oven to 350°F. Grease two 8 inch cake pans and line the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar until pale, creamy, and fluffy.
- Add the egg whites one at a time, mixing well after each addition. Stir in the vanilla and almond extract.
- Add dry ingredients and milk alternately, mixing gently until combined.
- Fold in the sour cream until the batter is smooth, being careful not to overmix.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 28 to 32 minutes, or until a toothpick inserted comes out clean.
- Cool the layers in the pans for a few minutes, then remove and cool completely.
- For frosting, beat the softened butter until smooth, then gradually add powdered sugar, almond extract, vanilla extract, and heavy cream.
- If desired, add pink food coloring to the frosting.
- Place one cake layer on a serving plate, frost the top, then add the second layer and frost the top and sides.
- Chill slightly before slicing for cleaner layers.

- Do not overmix after adding flour to keep the cake light.
- Measure almond extract carefully for best flavor balance.
