Description

A quick and delicious treat combining chocolate and peanut butter with crispy rice cereal.


Ingredients

Scale
  • 1 cup creamy peanut butter (chunky works too)
  • 6 tablespoons honey
  • 1 pinch salt
  • 3 cups Rice Krispies cereal (or any crispy rice cereal)
  • 2 cups chocolate chips, melted (semi-sweet, milk, or dark)

Instructions

  1. Line a muffin tin with liners or lightly spray with nonstick spray.
  2. In a small saucepan over medium-low heat, melt peanut butter, honey, and salt until smooth.
  3. Pour the warm peanut butter mixture over the Rice Krispies in a bowl and stir until evenly coated.
  4. Spoon mixture into muffin cups, filling about ⅔ full. Press down firmly so they hold together.
  5. Microwave chocolate chips in 20-30 second intervals, stirring between, until smooth.
  6. Spoon melted chocolate over each cup and smooth the tops.
  7. Refrigerate for 30 minutes, or until chocolate is firm. Serve chilled for best texture.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • Feel free to substitute almond butter for a different flavor.
